1 slice of Ezekiel Whole Grain Bread
½ ripe avocado
2 tbsp chickpea hummus
½ cup raw spinach
1 tsp. olive oil
Yields 1 serving
- Prepare the toast by heating the bread on both sides until browned.
- Meanwhile, slice the avocado into thin slices and rinse the spinach.
- Once the toast is browned, spread the chickpea hummus liberally on one side of the toast. Top with spinach.
- Arrange avocado slices on top of the spinach layer, drizzle with olive oil, and sprinkle salt (optional).
