Chicken & Vegetable Sizzling Skillet

 1 pound chicken breast (cubed or strips)
 2 tbsp olive oil
 2 tsp sesame oil
 2 cups cubed yellow summer squash
 1 cup chopped green onions
 3 to 4 garlic cloves, minced
 3 cups chopped tomatoes
 1/8 tsp cayenne pepper

Yields 2 servings


  1. Cut chicken breast into 2-inch cubes or strips.
  2. In a large skillet over medium heat, cook chicken breast in olive oil until a thermometer reads 160°; drain.
  3. Remove chicken from pan and allow to rest.
  4. In the same pan, add squash and onions; cook for 3 minutes. Add garlic; cook 1 minute longer.
  5. Stir in the tomatoes, sesame oil, and cayenne pepper, heat thoroughly.
  6. Optional: enjoy with cauliflower rice, brown rice, or quinoa
  7. Enjoy!
