2 large eggs
½ cup spinach
1 tbsp. Cream
¼ cup shredded cheese (cheddar or mozzarella)
1 tbsp. Chive (optional)
Yields 1 serving
- In a medium pan, add spinach and two tablespoons of water.
- Cover pan and place over medium heat.
- Meanwhile, beat eggs and cream until well combined.
- Once spinach is wilted, add egg mixture, and cook as desired (omelet-style or scrambled work best).
- Remove pan from heat, top with cheese and cover for 1-2minutes.
- Place eggs on a plate, top with chives
