Easy Eggs with Spinach

 2 large eggs
 ½ cup spinach
 1 tbsp. Cream
 ¼ cup shredded cheese (cheddar or mozzarella)
 1 tbsp. Chive (optional)

Yields 1 serving


  1. In a medium pan, add spinach and two tablespoons of water.
  2. Cover pan and place over medium heat.
  3. Meanwhile, beat eggs and cream until well combined.
  4. Once spinach is wilted, add egg mixture, and cook as desired (omelet-style or scrambled work best).
  5. Remove pan from heat, top with cheese and cover for 1-2minutes.
  6. Place eggs on a plate, top with chives
  7. Enjoy!
