Super Green Salad

 1 medium head of romaine lettuce, chopped or other choice of greens
 1 medium head of broccoli, cut into small pieces
 ¼ cup shelled pistachios
 ¼ cup chopped cucumber
 ¼ cup micro-greens
 ¼ cup chopped walnuts
 ¼ cup olive oil
 2 tbsp. Lemon juice
 1 tbsp. Dijon mustard
 3 tbsp. Grated parmesan cheese (optional)

Yields 2 servings


  1. In a medium saucepan, bring water to a boil.
  2. Add broccoli to the water, cook until bright and fork tender (a few minutes), remove and rinse with cold water. Pat dry and set aside.
  3. In a large bowl, combine lettuce, broccoli, pistachios, cucumber, micro-greens, walnuts, oil, lemon juice, mustard, and parmesan.
  4. Mix well until completely combined and dressing is fully integrated.
  5. Enjoy!
