No-Bake Nut Butter Balls

 4 tablespoons nut butter (your choice)
 1 cup pitted Medjool dates – pitted
 3/4 cup roasted nuts (your choice)
 1/3 cup gluten-free rolled oats
 2 tablespoons cacao powder


  1. Add the pitted dates, oats, cacao powder, nut butter, and roasted nuts to a food processor and pulse until mixed. If the mix is a bit dry, add a tablespoon of water, as needed.
  2. Once blended, divide the mix into 16 equal parts and use your hands to roll into 1-inch balls.
  3. Place the rolled balls into the fridge to firm up for about 15-30 minutes.
  4. Optional: Roll Nut-Butter balls in Coconut Flakes or Cacao powder


Store in an airtight container or Ziploc bag in the fridge for up to a week or freeze them for up to 2 months.
