Ingredients
1 large head of broccoli, cut into pieces
1 large head of cauliflower, cut into pieces
1 large zucchini, sliced into thin pieces
½ cup extra virgin olive oil
¼ cup roasted cashews
2 tbsp. minced garlic
1 large red roasted bell pepper
1 tsp. Paprika
1 tsp. Cumin
1 tsp. Curry powder
3 tsp. Red wine vinegar
Yields 2 to 3 servings
Preparation
- Preheat oven to 425 F.
- On a sheet pan, spread out mixture of prepared broccoli, cauliflower, and zucchini.
- Dress with ½ of the olive oil, and season with salt and pepper if desired.
- Bake until vegetables are cooked through and browned on the edges.
- While the vegetables cook, in a blender or food processor combine ½ of the olive oil, cashews, garlic, pepper, spices and vinegar. Blend until smooth.
- Serve cooked vegetables alongside the sauce or poured on top of the sheet pan.
